Aldi Flounder And Veggies In Parchment Paper

Use your imagination as you layer your favorite vegetables with the fish fillets. It's a rainbow in a pretty package!

Ingredients

  • Parchment Paper
  • Extra Virgin Olive Oil Spray
  • Extra Virgin Olive Oil
  • Fresh Spinach Leaves
  • Green Onions sliced diagonally
  • Shredded Carrots or matchstick slices
  • Portobello Mushrooms sliced
  • Grape Tomatoes halved
  • Red, Yellow, Orange Mini Sweet Peppers matchstick slices
  • Salt and Pepper
  • Meemaw's Magic Dry Rub (Or Your Choice)

Instructions

  1. PREHEAT OVEN TO 375 DEGREES

    Remove fish from freezer and remove the individually wrapped slices from the packaging. (No need to thaw the slices!) Place a large sheet of parchment paper on the counter. Spray it with Olive Oil Spray, or use a small drizzle of EVOO (Extra Virgin Olive Oil) instead. Place a heaping handful of spinach on the paper. Place a frozen flounder fillet on the spinach. Drizzle with a few drops of olive oil. Sprinkle with dry rub. Add some sliced  mushrooms, carrots, halved tomatoes, sweet peppers and green onions. Add another fish fillet and a drizzle of olive oil and more dry rub. Then another layer of veggies. Repeat with third layer if desired. Top with a few drops of EVOO and a tiny bit of salt and pepper. (Dry rub already contains both.) Fold the packet tightly. Place on a rimmed baking sheet and bake in preheated oven at 375 for about 20 minutes. Remove from oven and allow to "rest" for 5-10 minutes. Serve alone or with a side of rice or quinoa. ENJOY!
