Kitchen Sink Fruit Crostata

Sometimes I think outside the box.  (Well…I guess that’s MOST of the time.)  And today I decided to use up all the fruit sitting in the fruit bowl on the counter…by throwing them all together in a crostata!

In a mixing bowl I thinly sliced two peeled apples, two really ripe peaches, and one pear.  Then I threw in a handful of frozen blueberries for color. (Remember…eat a Rainbow every day!)  I added a splash of leftover Key Lime juice that was sitting in the refrigerator.  And I added a sprinkle of salt and small grating of fresh nutmeg, and about a teaspoon of cinnamon.  Then I threw in about 1/2 cup of white sugar and 1/4 cup of brown sugar and stirred it all together.  I dumped the whole mess onto a pie crust I placed on parchment paper on a rimmed baking sheet.  I folded up the edges and I brushed the crust edges with a beaten egg, and I sprinkled the edge of crust with a cinnamon and sugar mixture.

 
I baked the concoction at 375 degrees for about 35-40 minutes…
 
Not too bad for a last minute dessert idea. Now…who’s got the ice cream??
 
Well…actually…we met our Sunday Night Friends for pizza…and I took the crostata with us.  And friend Jeff walked 175 yards (Yes…He MEASURED!) to the nearest convenience store to buy a quart of vanilla ice cream to top it!  (Our pizza guys are awesome to let us bring our own dessert!  It must be because we are such “regulars”…)  And let’s just say after sharing the LAST piece with the staff…there was nothing left to bring back home…
 
Fruit bowl empty…stomachs full.  (Thanks Jeff!)
