Fake Crab Salad Quiche – From Disaster To Delicious

We’ve ALL done it.  We’ve been talked into a product by someone who knows less about it than WE do!!  It happened to me one day when a young chap at the meat counter at the grocery store told me their Imitation Crab Salad was “AWESOME”…! So I bought some.

As you can imagine, it was NOT awesome. That reminded me of my Dad’s kind way to dislike a food without being really offensive. He would say “It’s edible.” And I guess that would be the kindest way to describe that crab salad. I hated to see nearly $5 go down the garbage disposal, so I decided to turn the stuff into a “Quiche”…and see what happened.

Let’s just say that quiche really WAS awesome!!!!  I would definitely make this again…even for company!! And that’s saying something in MY book.

“FAKE CRAB SALAD” QUICHE

Preheat oven to 350 degrees.

Line a 9 in. pie pan with pastry & sprinkle with salt. 
(I used store-bought pastry…but if you want to make the crust, be my guest…Knock yourself out!)

In large bowl combine:
1 cup “fake crab” salad from the grocery deli
scant 1/2 cup mayo
1/2 cup diced and washed leeks
1/4 tsp garlic powder
1/2 cup chopped fresh broccoli
3 eggs
2 T. flour
1/2 cup whole milk or half & half
1 cup grated Cabot Vermont Extra Sharp Cheddar Cheese (THE BEST!!!!)
(remind me to tell you how far I’ll go to find their cheese!)
1/4 Cup shredded Asiago Cheese
Salt
Pepper

In bowl, stir together  crab salad, mayo, cheddar cheese, leeks, garlic powder, broccoli, eggs, flour, and milk.  Blend well and pour into crust.  Sprinkle with salt and fresh-ground black pepper.  Sprinkle top with the Asiago cheese.

Bake at 350 degrees for 40-45 minutes.  Remove from oven and let sit for at least five minutes before you cut servings.  Serve with salad.  And don’t tell ANYBODY it’s not “real” crab…they may NEVER know!!  ENJOY!
