Delaney’s Pumpkin Oatmeal Pancakes – With A Splash Of Apple Cider

Once Autumn arrives, some people get a little carried away with pumpkin. I’ve seen pumpkin added to almost everything! Recently I stumbled across this blog post from four years ago, and I decided this is one pumpkin dish that has stood the test of time. So take a trip down memory lane with me as granddaughter Delaney whips up a breakfast her sisters loved! (I can’t believe how fast time flies, and I am so grateful for these old blog posts with photos of our precious grandkids!)

On our  visit to Indy, I made several magic cooking memories with our three grandgirls who live there.  Our time spent together in the kitchen is not only fun, it’s a great time to teach the girls how to make a meal out of whatever you have on hand…and a DELICIOUS meal, at that!

It was breakfast time, and I asked Delaney to help me create a new pancake flavor.  And Emma and Claire agreed to be the “tasting panel judges”. Since an Autumn chill was in the air, we decided to make Pumpkin Oatmeal Pancakes, and we used lots of ingredients that we already had in the cupboard and in the refrigerator.

As you know, I don’t like to measure ingredients!  So Delaney and I  “dumped and stirred and tasted” until the batter was JUST RIGHT.

We started with about 3 1/2 cups of pancake mix.  (It was all that was left in the box.)
We added 1/2 cup of  uncooked Old Fashioned Oatmeal.
Then we stirred in:

About 2 tsps cinnamon
1/4 tsp cloves
1/2 tsp ginger
1/2 tsp salt
1 Tablespoon of Extra Virgin Olive Oil

Then we mixed in about 1 1/2 cups water

(That’s when I realized they had yummy fresh apple cider in the refrigerator…we we nixed the rest of the water we needed and we subbed apple cider instead!)

We added:
About 1 cup apple cider
About 3/4 of a 16 oz can of pumpkin  (next time I’ll use the whole can…and add more oatmeal to balance.)
About 2 Tablespoons of Honey
About 2 Tablespoons of Sugar

We stirred and mixed until the batter was the right consistency, and we added a little more cider until it was just right.

We cooked our cakes on MEDIUM heat in a skillet sprayed with cooking spray.

And the results speak for themselves.  Autumn on a plate.  YUM!  (Great job Chef Laney!)  And our tasting panel gave “thumbs up” all around.

I had to hide the leftovers…or there would have been no pancakes to freeze for another breakfast in a hurry!

      Thank you Ruth! Just grab whatever you can find it your cupboard and frig…and GO for it! (That’s the Meemaw Method of recipe creation!) 🙂
