Cucumber, Onion, and Tomato Salad

The other night, I decided I was NOT hungry for a regular green salad…but I still wanted a rainbow for dinner.  So I whipped up an old standby from my Mom’s era…A cucumber and onion salad.
 
 
I don;t remember my Mom adding tomato to her dish…but I love the addition.  So here is MY version…
 
RECIPE:
1 cucumber, washed, and semi-peeled.  (I like to leave some of the green skin on.)
2 Roma tomatoes, seeded and diced
1/2 of a yellow onion, thinly sliced
1/2 cup apple cider vinegar
1/4 cup water
some fresh parsley, minced
some sugar, to taste 
salt and pepper
 
Combine all ingredients and allow the flavors to blend until dinner time.
 
ENJOY!!!
