Claire’s Oven Roasted Potatoes

When I’m ready to cook…Claire is ready to help!  And last night she made some AWESOME oven roasted potatoes to go with our “Loose Meat” sandwiches.

Here is how she made them…(with a little help from Meemaw)…

Preheat oven to 450 degrees.

Cut several large potatoes into wedges and dry them.  Put them in a large bowl and drizzle with a little extra virgin olive oil.  Sprinkle with your favorite dry rub or seasoning blend.  Throw in some diced onions and garlic (Or add onion and garlic powder.)  Spray a baking sheet with cooking spray.  Dump potatoes onto cookie sheet and shake to make a single layer.  Roast for 20-30 minutes turning several times during baking.  Sprinkle with salt and fresh ground pepper.  YUM!
