Pork Chops With Red Cabbage and Apples – An Autumn Feast

Pork Chops with Red Cabbage and Apples. Yes Please.

If you are lucky enough to have an Aldi grocery store near you, you already know they offer a great selection of German items since that is where the company originated.  And one day my daughter in law Sara gave me a jar of red cabbage with apples she purchased at Aldi that she decided she wouldn’t be using in a timely fashion.

I stuck the jar in the cupboard and forgot about it…But when Autumn officially arrived, I thought it was time to celebrate with a good old German dish…and I remembered that jar in my cupboard.

So that jar led to a delicious dinner menu…but please excuse my less than stellar photos in this blog post. They were taken with a less than stellar camera. (Ugh!) 

Of course, I am never completely satisfied with what comes in a jar either…so I raided my refrigerator and pantry to “kick it up a notch”…

First I browned two “Iowa Chops” (Thick-cut pork chops…) and I set them aside.

Then into the same pan I added
 
1/2 of a large onion, thickly sliced.
1 clove of garlic, minced
1 red apple, cored and sliced but NOT peeled.
I cooked and stirred the mixture for several minutes.

Then I added…

 About 1 cup of Apple Cider, and I deglazed the pan with it before adding:
2 T. brown sugar
 
I cooked and stirred for several minutes to combine.
 
I added the jar of cabbage and apple mixture and stirred to combine.
 
Then I added the pork chops back to the pan and “buried” them in the bubbling goodness!
I cooked the chops for eight minutes, and I removed them and covered them on a plate to “rest”…and I continued to cook the cabbage mixture to reduce the liquid…

I served those wonderful, thick chops over a bed of the luscious sweet and sour cabbage mixture.  And I added a dollop of freshly mashed potatoes that I whipped up while the apple cider on the cabbage was reducing.

And the verdict?
Autumn officially arrived on a plate in Meemaw’s kitchen. And that plate was soon empty, I might add!

    I’m going to run to Aldi and pick up a jar of the cabbage, and Fareway for IA chops today. I plan to try this recipe on Sunday!! We haven’t had IA chops for a long time, and this sounds like a wonderful way to change things up a bit! Thanks for the inspiration!

    I’ve made a similar recipe using Country Style ribs, apple cider vinegar, apple juice, a Granny Smith apple, and fresh Red Cabbage in a slow cooker. I just know your recipe here is going to be excellent. Can’t wait to try it. Thanks.

      Thanks so much for writing John..Your recipe sounds awesome! And if you can’t find that jar of cabbage and apple mixture in your local store, here is what I do…I combined shredded red cabbage, onion, apple, garlic, brown sugar, honey, apple cider vinegar and caraway seeds in an old cast iron skillet with my browned chops.     Hubby just grabbed that Aldi red cabbage and some chops… we forgot cider so I will deglaze with something else. Always have red wine and beer on hand. We are going to pair with the Aldi frozen spaetzle!
