Banana Bars With Cream Cheese Frosting

I am usually far too optimistic when it comes to buying bananas. Those big bunches of yellow beauties BEG me to take them home with me…and I do. And there they remain…staring at me from our fruit bowl on the counter. Day after day. Until that lovely yellow bunch  become an unappealing shade of…NOT yellow! But being the frugal Meemaw I just can’t bear to pitch them in the garbage…so that’s when I turn on the oven…and BAKE!
 
Many thanks to our daughter-in-law Sara for this delicious recipe. I can truly say whenever I make these bars, someone ALWAYS says they are the best banana dessert they have ever tasted.

And the best part is….they are fast, inexpensive and easy to make. (Thanks again Sara!) 
 
Question…do these count as a serving of fruit in our daily diet planning???  Just a thought…
 
Banana Bars With Cream Cheese Frosting

Ingredients
  1. BANANA BARS
  2. 1 1/2 c. sugar
  3. 1/2 c. butter, softened
  4. 2 eggs
  5. 1 c. milk
  6. 1 t. baking soda
  7. 1 cup or 3 mashed bananas (I never measure-I just use three bananas!)
  8. 2 c. flour
  9. 1/2 t. salt
  10. 1 t. vanilla
  11. CREAM CHEESE FROSTING
  12. 3 oz. cream cheese (or I sometimes use half of an 8 oz pkg.)
  13. 1/4 to 1/2 c. butter (note: I only use 1/4 cup)
  14. 2 1/2 to 3 c. powdered sugar
  15. 1 t. vanilla
  16. 1 t. milk (or to desired consistency)
  17. cream together and frost when banana bars are cool
Instructions
  1. Mix butter and sugar until smooth. Add bananas, eggs, vanilla. Stir in flour, baking soda, salt. Add milk and combine all ingredients until blended. Pour onto a greased and floured 13 x 18 (or close) baking pan. Bake at 350 degrees for about twenty minutes or until done. Let cool, then frost with Cream Cheese Frosting.

    I needed this one- as I have the same problem with bananas- sitting and going bad
