I’m afraid I’m falling into a cooking “rut” so I’m trying to break out of my usual meal rotation. And the other night I realized I had all of the ingredients (almost) to make Chicken Cordon Bleu…so here is my take on that classic dish.
First…I pounded out the chicken breasts into thin pieces |
I added salt and pepper. Then added thin sliced Swiss cheese and Canadian bacon instead of ham |
I rolled the chicken into “logs” |
Then dredged them in seasoned bread crumbs |
I secured the logs with toothpicks to keep the cheese and bacon inside while cooking |
And I served the finished entree with a big salad and a glass of RED… |

And the finished dish was worth the effort |
It’s good to step outside your comfort zone once in awhile…and it can be DELICIOUS, too.
