Super Bowl Spinach Artichoke Dip – A Cheesy Touchdown Appetizer

The Super Bowl is almost here. And many people think more about the commercials and the party foods than the game itself. (Including ME!)
 
Our son Nick created an appetizer that would be perfect to take to a Super Bowl party. Now keep in mind, Nick cooks like I do.  He finds a recipe that sounds good, then he “tweaks” it to make it his own, and gto use the ingredients he has on hand.  And many times his version is even BETTER than the original recipe.  One day I watched and snapped photos as he created this awesome appetizer.  And since Nick rarely measures ingredients, these measurements are approximate. Please adjust the ingredients to YOUR taste! (That’s my favorite way to cook!)
 
A Cheese, Spinach, Artichoke and Garlic Appetizer
 
Finely chop 1/2 bag of Fresh Spinach…and add it to 1 1/2 blocks of Softened Cream Cheese…

Then Add:
3 cloves of Garlic, finely minced
6-8 oz. of grated Parmesan Cheese
6-8 oz. of Sour Cream
A “sprinkle” of dried Basil
Add a sprinkle of Red Pepper flakes, depending on Your love of HEAT!

Add 2 (8 oz.) jars of marinated, oil packed artichoke hearts, drained. (Discard liquid.)
Then add 1 8 oz. pkg of shredded Mozzarella Cheese…and mix well!

Combine all ingredients by gently folding all together.

Nick thinly sliced a loaf of French bread, and he brushed the slices with Extra Virgin Olive Oil.  Then he baked the bread in a 350 degree oven for 15-20 minutes until the bread slices began to turn golden brown.

He placed the dip in an oven proof casserole dish sprayed with cooking spray, and he baked it for approx 30 minutes until it was heated through and beginning to bubble…

The warm, toasted bread was the PERFECT vehicle to get that dip to our mouths…And the crunch was just the right compliment to the creamy dish.

This dip would be AWESOME served at ANY party…including the Super Bowl. So gather your ingredients and make your own version.
