Bacon Wrapped Asparagus

I love asparagus. And I love bacon. So combining the two to create Bacon Wrapped Asparagus is a match made in Heaven!

When I was a child growing up on an Iowa farm, we had our very own asparagus bed. It was located in our front yard…and it was there for as long as I can remember. If you look VERY closely at this photo you can see those willowy wisps that have gone to seed behind the large pine tree in our yard. (And yes, Dear Readers…that blurry little girl is me.)

I remember watching my mom as she carried that round cardboard blue canister of Morton Salt out into the yard…and I watched as she sprinkled salt all over that vegetable bed! (This is Mom with my big brother Tom.)

I never understood the logic of pouring salt on the ground ( I was a little girl at the time) but my research now tells me folks have been putting salt on asparagus beds for years. Apparently it’s a way to keep weeds from growing and taking over! 

My parents bought a house in town and moved when I was in college, and they rented our farmhouse out to a family with the hope that one of their children would eventually want to live on the farm where we grew up. And I remember getting a letter from my mom when I was in college, and hearing the sad news that those renters had killed our asparagus bed…on purpose! I could never understand why renters would take such liberties. I guess they thought the graceful fronds looked like weeds. Who knows. I’m actually still upset by their actions more than forty years later! 

My brother and his wife eventually moved back to Iowa and reclaimed our family farm…and they raised their children there. And they still own the farm. It’s just too bad that asparagus bed didn’t survive to feed another generation of them…and ME!

A delicious way to serve veggies...And we all know EVERYTHING tastes better with bacon!

Ingredients
  1. 1 bunch of asparagus
  2. 1 lb. bacon, uncooked
  3. salt and pepper
Instructions
  1. PREHEAT OVEN TO 400 DEGREES
  2. Wash and dry asparagus and break off the woody lower part of the stem.
  3. Wrap a slice of raw bacon around 5 or 6 stalks of asparagus
  4. Place on a parchment lined cookie sheet, seam side down
  5. Sprinkle with salt and pepper
  6. Roast about 10 minutes or until bacon is crispy and cooked through
  7. Watch closely so asparagus doesn't overcook
